The Strawberry and Baby Arugula salad combines a fresh nutty green with creamy goat cheese crumbles, sweet berries, and a tart balsamic dressing.

One bag of Baby Arugula
Thinly sliced Radishes
Cherry Tomatoes
Sliced Avocado
Sliced Strawberries
Goat cheese crumbles
Toasted pecans (One 1/4 cup of pecans in 350 degree oven for 5 to 10 min)
Dressing: One and 1/8 cup Balsamic Vinegar, 1/2 cup of chopped Strawberries, 1-2 tablespoons of Honey, 3-4 tablespoons of Olive Oil.
Blend all ingredients in a blender right before serving and gently drizzle over salad before serving. |
