
Fall
is here, summer is a fading into the past and all those late
summer veggies have piled up in your fridge. Here is a great
soup to combine some hearty veggies and warm you from head
to toes on a cool autumn evening.
Mediterranean Tomato Soup
8-10 medium size tomatoes
Olive Oil
Chopped onion
Garlic
Allspice
Dried mint
Marjoram
Basil
Salt
Chicken broth (optional)
Other chopped veggies: Mushrooms, zucchini, red pepper, garbanzo
beans, yellow squash, etc.
In soup pot combine a couple tablespoons of olive oil with
chopped garlic and onion. Cook over medium heat until the
onions are transparent. Add chopped tomatoes. Cook down until
the tomatoes have become liquid. Add spices (a pinch of each,
more or less for flavor) and cook for about 30 min. If the
tomato soup base has cooked off too much liquid add chicken
broth to desired thickness. Add other chopped veggies, return
to heat and cook until veggies are tender. Do not overcook
the vegetables. Salt to taste. Serve this vegetable stew in
ceramic bowls and side with crusty bread, kalamata olives,
and assorted cheeses.
Set a table for friends, serve a bottle of full bodied wine share
